Ingredients for 4 people

6 slices of hard old bread

2 tomatoes

1 red onion

1 cucumber

basil, olive oil

white wine vinegar

salt & pepper


Chop the onion, cut the cucumber into thin slices (removing the peel) and dice the tomatoes. Put them in a plate with salt, pepper and vinegar. Put the slices of bread into cold water and let them get soft in some minutes. When the bread is lump, squeeze it and remove the water. Crumble the dried bread on top of the vegetables. Add abundant olive oil and minced basil and mix well. Serve the panzanella after 1 hour in the fridge.
